摘要
鹿是我国传统的名贵药用动物之一。鹿茸及多种鹿副产品具有较高的药用价值和保健功效,但外源污染物的残留不仅影响鹿茸及鹿副产品的品质,还对消费者的健康造成危害。本研究通过查阅相关文献资料,分析和归纳鹿产品中重金属、兽药、食源性病原微生物的来源、残留及检测等相关研究进展,为鹿产品质量标准提高及污染物监控提供依据。
Deer is one of the traditional valuable medicinal animals in China.Velvet antler and a variety of deer by-products have high medicinal values and health care effects.The residues of exogenous pollutants not only affect the quality of velvet antler and deer by-products,but also harm the health of consumers.This study analyzed and summarized the sources,residues and detection of heavy metals,veterinary drugs and food borne pathogenic microorganisms in deer products by consulting the relevant literatures,so as to provide the basis for improving the quality standards of deer products and monitoring the pollutants.
