摘要
特香型白酒是中国十二大香型白酒之一,其产品具有独立的国家标准——《特香型白酒》(GB/T 20823—2017)。四特酒是特香型白酒的典型代表,其原料地域特色明显,大曲配方独特,酿造工艺也极具特色。本文从科学和生产实践的角度,高度概括和精炼总结了特香型白酒“12353”生产工艺密码。
Texiang Baijiu is one of the 12 flavor types of Chinese Baijiu,and it has an independent national standard GB/T 20823-2017.Site liquor is the representative of Texiang Baijiu,which has obvious regional characteristics,unique formula of Daqu,and peculiar fermentation technology.From the perspective of science and production practice,the production technology of Texiang Baijiu was decoded in this paper.
