高压静电场对米曲霉的致死效应及其酶活性的影响 被引量:8

摘要 高压静电场(HVESF)的场强、处理时间及悬浮孢子的萌发时间等对米曲霉菌致死率影响的试验结果表明:致死率的大小与悬浮孢子萌发时间的长短有密切关系;在所选处理剂量范围内,电场对总淀粉酶有较明显的激活作用;对α—淀粉酶多呈抑制效果;蛋白酶活性无明显变化。 The testing effects of High Voltage Electrostatic Field (HVESF), treatment time and germination time of the suspended spores on the death causing rate of Aspergillus oryzae showed that the magnitude of death-causing rate was closely related to the length of germination time of suspended spores, and that within the range of the selected treatment dose, the HVESF apparently had an activation effect on total amylases and an inhibition effect on a-amylase in most cases, and that there are no obvious changes in the activation of proteinase.
