摘要
为研究邢台地区栽种树莓的果实品质,筛选优良品种,本研究以‘拖拉买尼克’‘欧洲红’‘秋萍’和‘秋金’4种树莓品种果实为材料,采用分光光度计法、pH示差法和滴定法等对树莓果实的可溶性糖、可滴定酸、糖酸比、花青素、总黄酮、总酚以及维生素C含量等品质指标进行研究,并通过主成分分析和聚类分析对不同树莓果实品质进行综合评价。结果表明:‘欧洲红’的果实中可溶性糖、可滴定酸、花青素、总酚含量均最高,依次为142.31 mg/g FW、17.31 mg/g FW、1151.42 mg/kg FW、6.70 mg/g FW,可溶性糖、可滴定酸、花青素含量均显著高于‘拖拉买尼克’‘秋萍’‘秋金’,总酚含量极显著高于‘拖拉买尼克’和‘秋萍’;‘秋金’树莓果实中总黄酮的含量最多,为6.68 mg/g FW,极显著高于‘拖拉买尼克’;‘秋萍’树莓果实中的维生素C含量最高,为53.94 mg/100g,极显著高于‘秋金’。通过主成分分析提取出2个主成分,累计方差贡献率为88.497%,综合排名为‘欧洲红’‘秋萍’‘秋金’和‘拖拉买尼克’。采用聚类分析将4个树莓品种分为2类,‘欧洲红’和‘秋萍’聚为一类,‘秋金’和‘拖拉买尼克’聚为一类。
In order to study the fruit quality of raspberry and screen the varieties of raspberry with excellent quality,four varieties of raspberry,including‘Tuo la mai ni ke’,‘European red’,‘Qiu ping’and‘Fall Gold’,were compared.The contents of soluble sugar,titrable acid,ratio of sugar to acid,anthocyanin,total flavone,total phenol and vitamin C in raspberry fruit were studied by spectrophotometer,pH difference and titration.Variance analysis and cluster analysis was employed to evaluate the quality characteristics of raspberry.The results showed that‘European red’contained the highest,contents of soluble sugar,titrable acid,anthocyanin and total phenol in fruits of which were 142.31 mg/g FW,17.31 mg/g FW,1151.42 mg/kg FW and 6.70 mg/g FW,respectively.The contents of soluble sugar,titrable acid and anthocyanin in fruits of‘European red’were significantly higher than those of‘Tuo la mai ni ke’,‘Qiu ping’,‘Fall Gold’and the total phenol content was very significantly higher than that of‘Tuo la mai ni ke’and‘Qiu ping’.The content of total flavonoids in‘Qiu ping’raspberry was the highest(6.68 mg/g FW),which was very significantly higher than that in‘Tuo la mai ni ke’.The vitamin C content of‘Qiu ping’raspberry fruit was the highest(53.94 mg/100 g),which was very significantly higher than that of‘Fall Gold’.Principal component analysis extracted two principal components with a cumulative variance contribution rate of 88.497%,and the ranked varieties were‘European red’,‘Qiu ping’,‘Fall Gold’and‘Tuo la mai ni ke’.Cluster analysis grouped the four raspberry varieties into two clusters,‘European red’and‘Qiu ping’were grouped together,‘Fall Gold’and‘Tuo la mai ni ke’were grouped together.
