摘要
【目的】对不同变黄温度条件下不同成熟度烟叶颜色的变化规律进行研究,为不同素质烟叶的烘烤工艺优化提供理论依据。【方法】采集不同变黄温度(38、40和42℃)条件下不同成熟度烟叶变黄图像,提取烟叶色调值H、亮度值L、红绿值a和黄蓝值b等颜色参数,分析不同成熟度烟叶各项颜色参数在不同变黄温度下的变化规律,采用零阶和一阶动力学模型对各项颜色指标进行拟合,并计算各颜色参数变化的半衰期和活化能。【结果】随着烟叶成熟度的提高,鲜烟叶的L值、a值和b值逐渐增大,H值逐渐减小;在不同的变黄温度下,不同成熟度烟叶的H值均随着变黄时间的增加呈逐渐减小趋势,L值、a值和b值随着变黄时间的增加呈逐渐增大趋势;42℃较38℃的变黄条件,变黄后低成熟度烟叶的H值、L值、a值和b值分别相差1.41、2.22、1.71和3.10;随着成熟度的增加,不同成熟度烟叶的H值和a值的半衰期和活化能均逐渐减小;不同变黄温度下不同成熟度烟叶的H值和a值的变化符合一阶反应,L值变化符合零阶反应;建立不同成熟度烟叶变黄过程的预测动力学模型,经验证,该模型拟合程度较好,R^(2)为0.8484~0.9900。【结论】变黄温度对低成熟度烟叶的颜色影响较大,动力学模型可较为准确地模拟烟叶变黄过程中颜色的变化,为不同素质烟叶的烘烤工艺优化提供理论依据。
【Objective】The research aimed to study the change rule of color of flue⁃cured tobacco leaves with different maturity under different yellowing temperatures,so as to provide theoretical basis for the formulation of baking process of tobacco leaves with different qualities.【Method】The yellowing images of tobacco leaves with different maturity under different yellowing temperatures(38,40 and 42℃)were col⁃lected,and the color parameters such as hue value H,brightness value L,red⁃green value a and yellow⁃blue value b of tobacco leaves were ex⁃tracted.The changes of color parameters of tobacco leaves with different maturity at different yellowing temperatures were analyzed.The zero⁃order and first⁃order kinetic models were used to fit the color indexes,and the half⁃life and activation energy of each color parameter change were calculated.【Result】The increase of maturity,the L value,a value and b value of fresh tobacco leaves increased gradually,and the H val⁃ue decreased gradually.At different yellowing temperatures,the H values of different maturity tobacco leaves gradually decreased with the in⁃crease of yellowing time,and the L values,a values and b values gradually increased with the increase of yellowing time.Under the condition of yellowing at 42℃compared with 38℃,the H values,L value,a value and b value of low maturity tobacco leaves were 1.41,2.22,1.71and 3.10,respectively.With the increase of maturity,the half⁃life and activation energy of H value and a value of tobacco leaves with differentmaturity decreased gradually.The change of H value and a value of tobacco leaves with different maturity at different yellowing temperaturesconformed to the first⁃order reaction,and the change of L value conformed to the zero⁃order reaction.The prediction kinetic model of yellowingprocess of tobacco leaves with different maturity was established.The verification test showed that the model had a good fitting degree,and R^(2) was 0.8484-0.9900.【Conclusion】The yellowing temperature has a great influence on the color change of low maturity tobacco leaves.Thekinetic model can accurately simulate the color change of tobacco leaves in the process of yellowing,and provide a theoretical basis for the op⁃timization of baking process of tobacco leaves with different qualities.
