摘要
为了优化食品工程中微生物的控制方法,本文通过分析现存问题,提出了优化杀菌工艺参数、构建全链条污染溯源机制、研发高通量快速检测技术、建立定量风险评估模型等对策。研究表明,多学科交叉融合的系统方法可有效提高食品微生物控制水平。未来应加强新技术应用,完善标准体系,构建全方位微生物安全防控网络,为保障食品安全提供科学依据。
This article aims to study the optimization of microbial control methods in food engineering.By analyzing existing problems,strategies such as optimizing sterilization process parameters,constructing a full chain pollution traceability mechanism,developing high-throughput rapid detection technology,and establishing a quantitative risk assessment model are proposed.Research has shown that a systematic approach that integrates multiple disciplines can effectively improve the level of food microbiology control.In the future,we should strengthen the application of new technologies,improve the standard system,build a comprehensive microbial safety prevention and control network,and provide scientific basis for ensuring food safety.
