刺葡萄渣的可持续性绿色加工的研究进展

摘要 近年来,从刺葡萄渣等食物垃圾中回收有价值的化合物是食品行业的一个新问题。刺葡萄渣是葡萄酒工业经过压榨和发酵过程后产生的一种重要的固体废物,造成污染及经济损失。刺葡萄渣由10%~30%的碎葡萄和其他营养成分(如未发酵的糖、多酚和天然色素等)组成。通过最合适的提取工艺回收这些化合物,并能够在不影响产品稳定的情况下实现产量最大化。刺葡萄渣具有巨大的潜在价值,在酿酒厂及其他食品行业中仍有技术有待采用与开发。通过阐述酶辅助提取法、固液萃取法、超临界流体萃取法等提取技术,综述刺葡萄渣的抗菌、抗氧化、抗癌等作用,以及可加工成动物饲料、膳食纤维片剂等应用价值。 In recent years,it is a new problem in the food industry to recover valuable compounds from food waste such as Vitis davidii pomace.Vitis davidii pomace is an important solid waste produced in wine industry after pressing and fermentation,which causes pollution and economic losses.Vitis davidii pomace was composed of about 10%~30%crushed grapes and other nutrents(such as unfermented sugar,polyphenols and natural pigments).These compounds can be recovered by the most suitable extraction process,and the yield can be maximized without affecting the stability of the products.Vitis davidii pomace residue has great potential value,and there are still technologies to be adopted and developed in wineries and other food industries.In this paper,the extraction techniques such as enzyme-assisted extraction,solid-liquid extraction and supercritical fluid extraction were mainly described.The application value of Vitis davidii pomace with antibacterial,antioxidant and anticancer functions and being processed into animal feed and dietary fiber tablets was also introduced.
