摘要
目的:通过测定红果参主要矿质元素的含量并对其膳食营养进行评价,为其开发利用提供参考。方法:采用食品标准GB 5009.268—2016中消解法测定红果参鲜果中磷、钙、镁、铁、锰、铜、锌、钾、钠、硒和碘等11种矿质元素含量,并以膳食矿物质适宜摄入量(RNI/AI)和可耐受最高摄入量(Tolerable Upper Intake Levels,UL)为评价标准,对不同性别和年龄段人群每日从果实中摄入矿质元素的量进行初步的膳食风险评估。结果:在这11种矿质元素中,与81种常见水果相比,红果参中锰(1.17 mg/100 g)、碘(2.80μg/100 g)、铁(5.94 mg/100 g)、钾(399.69 mg/100 g)和钙(73.48 mg/100 g)这5种矿物元素含量较高,排名均在前十;红果参匹配度与%RNI(AI)的变化趋势相同,所有元素在1~4岁年龄段下的%RNI(AI)值为最高,在11~18岁年龄段下的%RNI(AI)值最低。结论:红果参矿物质丰富、含量高,是一种营养价值高的新兴水果,具有良好的开发应用价值和市场前景。
Objective : To provide reference for the development and utilization of Cyclocodon lancifolius by measuring the content of main mineral elements and evaluating its dietary nutrition. Method: The contents of 11 mineral elements including phosphorus, calcium, magnesium, iron, manganese, copper, zinc, potassium, sodium, selenium and iodine in fresh fruits of Cyclocodon lancifolius were determined by the digestion method in the food standard GB 5009.268—2016.The appropriate dietary mineral intake(RNI/AI) and the maximum tolerable intake(UL) were used as the evaluation criteria to assess the dietary risk of daily intake of mineral elements from fruits in different genders and age groups. Result: Among the 11 mineral elements, compared with 81 common fruits, the contents of manganese( 1.17 mg/100 g), iodine( 2.80 μg/100 g),iron( 5.94 mg/100 g), potassium( 399.69 mg/100 g) and calcium( 73.48 mg/100 g) were higher, the contents of the five elements were ranked in the top ten. The matching degree of Cyclocodon lancifolius was the same as the change trend of % RNI(AI). The % RNI(AI) value of all elements was the highest in the age group of 1~ 4 years old, and the % RNI(AI)value was the lowest in the age group of 11~ 18 years old. Conclusion: Cyclocodon lancifolius is rich in minerals and high in content. It is a new fruit with high nutritional value and has good development and application value and market prospect.
