微量营养素风险等级的划分 被引量:11

The Risk Classification of Micronutrients

摘要 微量营养素(主要包括维生素和矿物质)是人体生长发育和代谢必不可少的物质,在机体内发挥着重要的生理功能。缺乏某一种微量营养素会引起机体的不良反应甚至导致疾病,国际社会也把改善全球的微量营养素缺乏作为重要的公共卫生政策之一。根据各国的防治经验,平衡膳食/膳食多样化、食物强化、应用营养素补充剂是改善人群微量营养素缺乏的三种主要措施。随着社会经济的发展和公众对营养和健康的重视,客观上增加部分人群微量营养素过量摄入的风险。
