摘要
抗生素作为医学的支柱在被发现之后就得到了广泛的应用,但随之也带来了各种抗生素残留问题。抗生素残留对人类、动物、环境都会造成很大的危害。因此在生产生活中必须严格按照国家标准,谨慎地使用抗生素,并且监测动物源性食品中抗生素的残留量,将其控制在最低标准以下。本文综述了抗生素的种类,抗生素的应用,抗生素残留对环境和人体健康的危害,最后总结了动物源性食品中抗生素的不同检测方法及其研究进展。
Antibiotics have been widely used as pillars of medicine since they were discovered,but it also brings about various residual problems.Antibiotic residues cause great harm to humans,animals and the environment.Therefore,antibiotics must be used strictly in accordance with national standards,and the residues of antibiotics in animal-derived food must be detected and controlled within the minimum standards.The types of antibiotics,the effects of antibiotics and the harm of antibiotic residues on the environment and human health were reviewed.In the end,the different detection techniques and progress of antibiotics in animal-derived food were summarized.
