冷榨油品质控制及检测分析方法研究进展 被引量:2

摘要 冷榨油是在稳定低温下,通过外力机械作用直接挤压含油种子生产的植物油,由于保留了原料中的活性天然成分,如角鲨烯、植物甾醇、多酚、生育酚等,且未破坏油脂中抗氧化物,其营养价值和稳定性较高。本文介绍冷榨油特点和优势,综述了冷榨油营养特性及生理功能,并以橄榄油和菜籽油等为例,分析了脂质化合物和脂质伴随物作为冷榨油检测评判指标的原理及其在鉴定真伪中的应用,总结了冷榨油品质检测的技术手段,并对冷榨油在市场上更加精准便捷的检测方法进行展望。 Cold-pressed oil is a kind of vegetable oil directly extruded from oilseeds by external force at a low temperature.It has high nutritional value and stability since active natural components,such as squalene,phytosterols,polyphenols,tocopherols are retained from raw materials and the antioxidants in the oil are not damaged.The huge market demand for this kind of high-priced and high-quality edible oil calls for further strengthening and improvement in its quality control and characterization.Herein,we introduces the characteristics and advantages of cold-pressed oil,and summarizes its nutritional characteristics and physiological functions.Olive oil and rapeseed oil are shown as examples to reveal the principles of lipid compounds and lipid concomitants as the evaluation index of cold-pressed oil and their application in authentication.Finally,technical means that can be used for quality control of cold-pressed oil are summarized,together with the future development of more accurate and convenient detection methods of cold pressed oil.
