摘要
主要论述了以粟米、大豆为主要原料酿制出特色粟米酱的工艺过程。粟米经浸泡、蒸煮、制曲后与蒸熟的大豆混合,加入盐水进行发酵。酿制出的成品营养丰富,味道鲜美。
This paper described the main technical process of millet catsup using millet and soybean as main materials.The process steps consisted of steaming millet,making koji,mixing with soybean,brining and fermenting.The product was nutrient and tasty.
