高通量测序法对不同地域浓香型大曲微生物结构的分析 被引量:29

摘要 以分布最广的浓香型白酒为研究对象,利用高通量测序法对不同地域的大曲进行取样分析。结果表明,北方派优势细菌有高温放线菌属、连孢子菌属、丙酸杆菌属等;优势真菌有热子囊菌属、嗜热真菌属、异常维克汉姆酵母等。长江中游派优势细菌有乳杆菌属、片球菌属、明串珠菌属等;优势真菌为曲霉属、热子囊菌属、嗜热真菌属。江淮派优势细菌有乳杆菌属、链孢子菌属、丙酸杆菌属、片球菌属、芽孢杆菌属等;优势真菌有曲霉属、热子囊菌属、耐干霉菌属等。川派优势细菌有魏斯氏菌属、乳杆菌属、芽孢杆菌属、高温放线菌属等;优势真菌有热子囊菌属、嗜热真菌属、曲霉属等。 Taking Nongxiang Baijiu as research object, we analyzed Daqu samples from different regions by using high-throughput sequencing. The results showed that, the dominant bacteria species in North China included Thermoactinomyces, Streptomyces, and Propionibacterium, and the dominant fungi species included Thermoascus, Thermomyces and Wickerhamomyces anomalus. The dominant bacteria species in the middle reach of the Yangtze River included Lactobacillus, Pediococcus and Leuconostoc, and the dominant fungi species included Aspergillus, Thermoascus, and Thermomyces. The dominant bacteria species between the Yangtze and Huai Rivers were Lactobacillus, Streptomyces, Propionibacterium, Pediococcus and Bacillus, and the dominant fungi species were Aspergillus, Thermoascus and Xeromyces. The dominant bacteria species in Sichuan were Weissella, Lactobacillus, Bacillus and Thermoactinomyces, and the dominant fungi species were Thermoascus, Thermomyces and Aspergillus.
