摘要
对仙人掌可食用茎干近十年来的相关研究进行概述。仙人掌可食用茎干富含水分、矿物质、多糖、膳食纤维以及黄酮类化合物,被视为一种理想的健康食品。仙人掌茎干部分生理活性的研究目前集中在抗氧化、降低餐后血糖、神经保护和抗菌上。文章为仙人掌茎干在食品、保健、医疗等领域进一步深加工开发提供新的思路。
The studies of nutrients and biological activity about edible Opuntia stem of this decade has been introduced. Opuntia,which was regarded as an ideal healthy food,is rich in water,mineral,polysaccharides,dietary fiber and flavone.The biological activity studies of Opuntia is focused on oxidation resistance,decrease postprandial hyperglycemia,neuroprotection and antibiosis. Some new ideas about deep processing of Opuntia for food,health care and medical area has been provided in this paper.
