摘要
番茄红素是成熟番茄中的主要色素,是一种非常重要的不含氧的类胡萝卜素,色泽暗红,为纯天然食品添加剂,并且具有优越的生物学功能。本文概述了番茄红素的分子结构、理化性质,着重总结了其优越的生理作用。
Lycopene is the main pigment in ripe tomato and a very important carotenoids which do not contain oxygen ,colour and lustre is dark red.Lycopene is a kind of natural food additives ,with advantageous physiology function.This paper outlined the structure of lyeopene,physical and chemical properties, summarized the superior physiological function of lycopene.
