摘要
介绍了大豆分离蛋白膜的制备方法以及性能测定方法。研究了不同微波功率、微波作用时间和成膜液pH值对膜的透水系数、透氧系数、抗拉强度和延伸率等膜特性的影响。通过正交试验,讨论了微波改性对大豆分离蛋白膜性能的影响,得出大豆分离蛋白膜的最佳改性方案:微波功率为480 W,微波作用时间为120s,成膜液pH值为10。
The preparation methods of soy protein isolate film and its performance determination methods are introduced.The influence of different microwave power,microwave time and pH value of film-forming liquid on permeable coefficient,oxygen transmission coefficient,tensile strength and extensibility of the film is studied.The effect of microwave modification on the properties of soy protein isolate film is discussed based on the orthogonal experiments,and the best modification condition of soy protein isolate films is obtained as follows:microwave power of 480 W,microwave time of 120 sand pH value of 10.
