摘要
目的 掌握和分析大兴区食品食源性致病菌污染状况及变化趋势,确定危险因素及可能的来源,为食品安全风险评估、预警和采取有针对性的食品安全监管措施提供科学依据。方法 按北京市食源性致病菌监测手册进行检测。结果2011~2014年共监测样品863件,检出食源性致病菌6种68株,阳性率7.88%;食源性致病菌以副溶血性弧菌、单增李斯特菌和沙门氏菌为主;污染最严重的食品是生畜肉,致病菌阳性率50.00%,其次鲜冻水产品、生牛奶、鲜榨果蔬汁等生鲜食品污染率也较高,熟肉制品阳性率最低为4.88%。结论 生鲜食品是大兴地区的高危食品,污染的致病菌以副溶血性弧菌、单增李斯特菌和沙门氏菌为主,提示有引起食物中毒的风险,应针对生鲜食品加强监管,防止交叉污染,预防食源性疾病的发生。
Objective To analysis the status and trends of contamination of foodborne pathogenic bacteria in food, in order to providing scientific basis for food safety risk assessment, early warning and food safety regulations. Methods 863 food samples were collected and laboratory tests for foodborne pathogenic bacteria contamination were carried out based on the guidelines of Beijing Foodborne pathogenic bacteria monitoring manual. Results There was 68 foodborne pathogenic bacteria which including 6 kinds of strains were found among 863 samples. The positive rate was 7. 88%. The main contamination of the foodhorne pathogens were Vibrio parahaemolyticus, Listeria monocytogenes and Salmonella. The most seriously contaminated sample was raw meat,which the positive rate was up to 50%. The others such as frozen aquatic products, raw milk, the fresh fruit juice and vegetable also took a high positive rate. The cooked meat products had the lowest positive rate with 4.88%. Conclusion The high risk food contaminated with foodborne pathogenic bacteria in Daxing district is the fresh food raw material. The foodborne pathogens mainly are Vibrio parahaemolyticus, Listeria monocytogenes and Salmonella. The supervision should be strengthening for prevention of cross contamination of the foodborne bacteria and prevention of the outbreak of foodborne disease.
