摘要
2010年45月,在开封市区主要蔬菜市场随机采集7类32种蔬菜,共62个样品,进行了硝酸盐和亚硝酸盐检测和食用安全性评价.结果表明:叶类蔬菜中硝酸盐的含量较高,平均值497.64 mg·kg-1;其次是豆类、瓜果类和根茎类.叶菜类的荆芥属于中度污染,其余均属轻度污染;不同类别蔬菜硝酸盐含量高低依次是叶菜类〉葱蒜类〉豆类〉食用菌类〉茄果类〉根菜类〉瓜果类.蔬菜样品中亚硝酸盐含量最高值是4.07 mg·kg-1,平均含量高低依次是豆类〉葱蒜类〉茄果类〉根菜类〉瓜菜类〉叶菜类〉食用菌类.除了茄果类成熟的红泡椒外,其他样品的亚硝酸盐含量都不超标.与其他城市市售蔬菜相比较,开封市市售蔬菜亚硝酸盐含量偏高.
Content of nitrate nitrogen and nitrite nitrogen of 32 kinds of vegetables, Class 7, a total of62 samples were collected randomly in the main vegetable market of Kaifeng city in April - May 2010. The highestnitrite content of Vegetables is 4.07 mg· kg-1, the order of the average content of nitrite was legumeVegetables 〉 onion garlic class 〉 egg plant vegetablesedible fungi vegetables. The nitrite content of the all〉 root class 〉 melon vegetables 〉 leaf vegetables 〉samples the other samples were not excessive theNational standard( GB18406. 1 -2001 ), except the mature red robe pepper Solanaceae. Comparing thecontent of nitrate and nitrite with those of other cities, the content of nitrite in vegetables in Kaifeng Citywere higher.
