摘要
对湖州市民日常食用的5大类31种蔬菜154个样品中硝酸盐和亚硝酸盐的污染现状进行了测试和分析.结果表明:不同种类蔬菜的硝酸盐含量分布在80.2~6458.1mg/kg之间,以均值计依次为:叶菜类(均值1669.38mg/kg)根茎类(均值955.09mg/kg)>豆类(均值487.90mg/kg)>茄果类(均值390.86mg/kg)>瓜类(均值344.29mg/kg).在所检测的蔬菜样品中,有17.5%的蔬菜样品的硝酸盐含量超标,其中根茎类蔬菜中硝酸盐含量超标最严重,超标率为27.7%,茄果类蔬菜中硝酸盐含量超标较低,超标率为6.7%.蔬菜受不同程度的硝酸盐污染,污染程度严重的蔬菜样品占26.0%,中、重度污染占55.8%,轻度污染占18.2%.以叶菜类污染最严重,青菜、菠菜、荷兰芹、大白菜等硝酸盐超标非常严重,西红柿、土豆、黄瓜、苦瓜、丝瓜、豇豆等硝酸盐含量相对较低.各类蔬菜的亚硝酸盐含量都较低,在1mg/kg以下,均未超标.
The nitrate and nitrite contents were analyzed in 5 categories, including 31 types and 154 samples of vegetables sold in Huzhou Markets every day. The result shows that the nitrate contents in dif- ferent kinds of vegetables range from 80.2-6458.1 mg/kg. According to the average contents in turn they are: green leaf vegetables (1669.38 mg/kg) 〉root vegetables (955.09 mg/kg) 〉legume vegetables (487.90 mg/kg) 〉fruit vegetables(390.86mg/kg)〉melon vegetables(344.29 mg/kg). Among the samples analyzed, 17.5% are above the allowed standard in nitrate contents, among which root vegetables are the highest, above 27.7%, and the fruit vegetables are the lowest, about 6.7%. Vegetables are polluted by nitrate in different degrees, from the most serious to better in turn they are: 26.0%, 55.8% and 18.2%. Green leaf vegetables are the worst polluted, green grocery, spinach, parsley and Chinese cabbage all belong to those the nitrate contents are far above the allowed standard. Tomato, potato, cucumber, balsam pear, towel gourd and bean are the lowest in pollution. The nitrite concentration in vegetables is very low, less than 1mg/kg. All the vegetables are lower than 1 mg/kg in nitrite contents, which are within the allowed limits.
