摘要
全脂大豆的主要成分 ,具有较高的营养、医药、保健价值。由于全脂大豆含有抗营养因子 ,因此 ,对大豆适宜的热处理和物理加工 ,是开发、应用大豆的关键。
The article makes a survey of the main nutrients of fullfat soya bean,which indicates that fullfat soya bean is very valuable for its nutrition in the area of medicine and healthcare.Owing to the anti-nutrition factors in thd soya, proper heat process and physical process are the key to the development and application of soya bean as a nutritious and healthy product.
