摘要
通过利用传统工艺制成的地面曲与微机控制架子曲的生产试验的对比,发现架子曲对老白干酒的酯,酸和产酒率有影响,为改进架子曲的工艺提供了参考。
The effect of the shelf starter on laobaigan liquor was studied. The shelf starter was used in production of laobaigan liquor to compare with the traditional starter. The results showed that the conents of acids and esters in the liquor fermented by the shelf starter were lower than tha by the traditional starter, the yield of liquor was also reduced.
