几种鲤鱼肌肉的一般营养成分及蛋白质氨基酸组成的比较 被引量:39

摘要 分析了建鲤 ,黄河鲤 ,荷包红鲤 ,建鲤与黄河鲤、荷包红鲤的杂交种 ,人工复合三倍体鲤鱼肌肉营养成分 ,结果表明 ,人工复合三倍体鲤蛋白质含量 w为 18.2 9% ,每百克鱼肉中氨基酸总量为 17.64g,其中人体必需氨基酸含量为 8.56g,均为几种鲤中最高。建鲤蛋白质和氨基酸含量较高。建黄杂种 (建鲤♀×黄河鲤 )除蛋白质含量高于亲本外 ,其余指标均介于两亲本之间。可见三倍体鲤鱼比普通鲤鱼和杂交种营养成分含量高 ,肉味鲜美 ,能改善肉质 ,杂交和选育对肉质改良的作用可能不大。 The nutritive compositions in the muscle of Jian carp ( Cyprinus carpio var .jian), Hebao red carp (Cyprinus carpio var. wuyuanensis) ,Huanghe carp (Cyprinus carpio), artificial multipe triploid carp (AMTC),as well as the hybrid Jianhuang (Jian carp♀×Huanghe carp )and Jianhe (Jian carp ♀Hebao red carp ) were studied.The results indicate that the protein content,the total amounts of amino acid and human essential amino acid of artificial multiple triploid carp are 18.28%,17.64 g/100 g and 8.56 g/100 g respectively,all these indexes possess the highest among the six species.The protein and amino acid content of Jian carp are also higher.Among the hybrid,only the protein content of Jianhuang is higher than that of its parents,other nutritive compositions take the place between its parents.So it is concluded that triploid common carp can improve the meat quality,while selection and crossing may play less important role in meat quality improvement.
