摘要
对齐口裂腹鱼Schizothoraxprenanti小规格幼鱼 (体重 ( 1 9±0 2 ) g)、大规格幼鱼 (体重(72 4±7 3) g) 和成鱼 (体重 (371 8±20 5) g) 肌肉中的水分、蛋白质、脂肪含量及脂肪酸、氨基酸组成进行了分析, 结果表明: 齐口裂腹鱼肌肉中的蛋白质含量高达 16 72%, 脂肪含量却较低;多不饱和脂肪酸含量占脂肪酸总量的 19 88%, 必需氨基酸的含量占氨基酸总量的 47 93%, 谷氨酸的含量很高, 占氨基酸总量的 14 56%。
Contents of moisture, protein, lipid, fatty acids, and amino acids were analyzed in the muscles of small (weight (1.9±0.2)g), large juvenile (weight (72.4±7.3)g) and adult prenant's schizothoracin Schizothorax prenanti(weight (371.8±20.5)g). There were 16.72% of crude protein and 19.88% of poly unsaturated fatty acids (PUFA)in total fatty acids. The essential amino acids accounted for 47.93% of total amino acids, in which glutamic acid was considerably high, reaching about 14.56%.
