摘要
【目的】广泛利用果蔬产地丰富的太阳能,降低传统干制的能耗,提高果蔬太阳能干制的生产效率和传统干制工艺的升级。【方法】从节能环保、干燥周期、产品质量与优级品率、投资回收期等环节分析太阳能干制技术优势与特点。通过对干燥物料特性、太阳能干燥装置的分类与性能、太阳能资源条件以及干燥模型和工艺的分析,找出影响果蔬太阳能干制速率和品质提升的主要制约因素。【结果】作为间歇性能源太阳能应作为补充能源进行联合干燥、连续智能干制是为今后的我国果蔬干制的发展方向。【结论】应根据不同原料的特性、环境条件、合理控制组合干燥的温湿度和风速等,不断提高组合式太阳能干燥装置的自动化控制水平。
We analyzed the feature and its advantages of solar drying techniques in order to use the solar energy sufficiently and improve traditional dehydrated process.The analyses included energy saving,environmental protection,drying period,quality of products,and payback period of investments.Some factors which influence the quality and the rate of dehydrated fruits and vegetables by solar drying techniques were discussed.We suggested that solar energy should be used as a supplement energy in combined drying process and continuous intelligent dehydration should be developed in future.To improve the level of the automatic control on combined solar drying units,it is necessary to pay attention to raw materials and ambient condition,such as temperature,humidity and wind.
