摘要
目的测定我国常见蔬菜和水果中花色素的含量。方法收集我国广州、天津、重庆和武汉四个地区的常见蔬菜和水果样本,采用高效液相色谱的方法分析和定量了飞燕草素、矢车菊素和芍药素三种花色素。结果蔬菜样本中紫包菜和紫苏中三种花色素含量最高;水果样本中桑椹和杨梅花色素含量最高。结论不同产地和品种的蔬菜和水果中花色素含量有很大差别,蔬菜中花色素以矢车菊素和飞燕草素为主,水果中花色素以矢车菊素为主。
Objective To analyse the anthocyanidins contents of common vegetables and fruits in China.Method The common vegetables and fruits were sampled from Guangzhou,Tianjin Chongqing,and Wuhan,China.The contents of delphinidin,cyanidin and peonidin were determinded by HPLC system.Results Among the vegetable samples,antho-cyanidins were the richest in red cabbage and purple perilla.Among the fruit samples,anthocyanidins were the richest in mulberry and red bayberry.Conclusion The contents of anthocyanidins varied significantly among different vegetbles and fruits,and cyanindin and delphindin were the most distributed.
