不同品种紫甘薯体外抗氧化活性的比较 被引量:17

摘要 用ABTS、DPPH和铁离子还原能力对4种紫甘薯花色苷的抗氧化活性进行测定,并与葡萄皮、紫米花色苷以及天然抗氧化剂BHT进行比较。结果表明:紫甘薯花色苷对DPPH.、ABTS+.和铁离子还原能力的EC50值分别在40.00~51.78μg/mL、22.82~26.04μg/mL和47.26~59.60μg/mL,而葡萄皮花色苷和紫米花色苷对DPPH.、ABTS+.和铁离子还原能力的EC50值分别为68.24μg/mL和138.32μg/mL、27.36μg/mL和68.39μg/mL、70.29μg/mL和169.49μg/mL,BHT对DPPH.、ABTS+.和铁离子还原能力的EC50值为39.48μg/mL、29.00μg/mL和82.59μg/mL。由各物质的EC50值可以得出,紫甘薯花色苷比葡萄皮和紫米花色苷有较高的自由基清除能力和铁离子还原能力。 The antioxidant activity of the four different varieties of purple sweet potato anthocyanins were determined by ABTS,DPPH· and ferric reducing ability.And compared with the grape skin,Zim anthocyanins and the BHT.The results show that the EC50 values of anthocyanins in purple sweet potato on DPPH·,ABTS+ ·and ferric reducing ability were 40.00~51.78 μg/mL、22.82~26.04 μg/mL and47.26~59.60 μg/mL.The EC50 values of anthocyanins in grape skin and Zimi on DPPH·,ABTS+·and ferric reducing ability were 68.24μg/mL and 138.32 μg/mL,27.36 μg/mL and 68.39 μg/mL,70.29 μg/mL and 169.49 μg/mL,the EC50 value of BHT on DPPH·,ABTS+·and ferric reducing ability were 39.48 μg/mL、29.00 μg/ml和82.59 μg/mL.The EC50 values by the material can be drawn that the anthocyanins from purple sweet potato have higher radical scavenging ability and ferric reducing ability than anthocyanins from grape skin and Zimi.
