摘要
酿酒活性干酵母是现代高新技术融合发展的一种生物活性制品,具有发酵性能优良、细胞耐性强、絮凝性好、保存期长等特点。综述了现代生物工程育种技术、酵母菌流加培养、干燥技术的研究进展,并展望了发展前景。
AADY is a bioactive product produced by modern hightechs and it has the advantages including superior fermenting performance,strong cellular tolerance,good flocculation,and long storage period etc.In this paper,the research progress in modern bioengineering breeding techniques,fed-batch culture of microzyme,and drying techniques were reviewed and their development prospects were discussed.
