摘要
对吉林省小粒大豆进行了多项生化品质成分分析研究,结果表明:①小粒大豆品种在蛋白质及氨基酸含量上均高于大粒大豆品种,平均分别高出282%和154%;脂肪含量低于大粒大豆各品种,但小粒大豆的脂肪酸组成中,亚油酸含量较高,比大粒大豆平均高出509%;小粒大豆亚油酸与亚麻酸配比合适。②小粒大豆的总糖含量低于大粒大豆,其还原糖含量却高于大粒大豆,平均高出061%;小粒大豆各品种粗纤维含量高于大粒大豆,平均高出103%。③小粒大豆的钙、锌含量分别比大粒大豆高43823μg/g、1153μg/g,铁的含量比大粒大豆低,镁的含量基本一致。④吉林小粒2号在许多生化指标上最为优越,其蛋白质含量达4466%,蛋白含量与脂肪酸含量之和达6255%,谷氨酸、天门冬氨酸、亮氨酸、赖氨酸、精氨酸等氨基酸含量最高,还原糖含量最高,达592%。
The results showed that the content of protein and amino acid in the varieties in the small grained is higher 2.82% and 1.54% respectively than that in big grained.The content of fat in the varieties of the small grained is lower than that of the big grained,but the lincleic acid in the fatty acic in the small grained is higher 5.099% than that in the big grained sorbean.The proportion of linoleic acid and linolenic acid in the small grained is appropriate.The content of sugar in the small grained is lower than that in the big grained.But the content of reducing sugar in the small grained is higher 0.61% than that in the big grained.The content of fiber in the small grained is averagedly higher 1.03% than that in the big grained.The content of calcium and zinc in the small grained is higher 438.23 μg/g and 11.53 μg/g respectively.But the content of iron in the small grained is lower,and the content of magnesium is almost the same.Among them, many biochemical indexes.Jilin 2 is the best of The content of protein is 44.66%.The total content of protein and fat is 62.55%.The content of amino acid such as glutamin acid,aspartic acid,leuaine,lysine and arginine is the highest.The content of reducing sugar is also the highest,and it is 5.92%.
