摘要
目的探讨食品营养标签中营养成分标示方法的合理性。方法从10个省市市场抽检326件婴幼儿乳粉、米粉,记录营养成分标示方法;采用GB/T5413—1997对蛋白质、脂肪、维生素A、钙、铁、锌进行测定,根据GB10767—1997和GB 13432—2004对每种营养成分的检测结果进行判定,计算不合格率。采用行x列表χ2检验分析不同标示方法间—平均值、范围值、最高(低)值检测不合格率的差异。结果食品标签中营养成分标示方法因食品类型、营养成分特性及含量而异,在被判定为不合格的检验结果中,有65%为不符合标签标示但符合GB 10767—1997规定的技术要求;其中以平均值标示的不合格率最高,以最高(低)值标示的不合格率最低,主要原因为GB对以范围值、最高(低)值标示的营养成分检测值最大允许偏差范围宽于平均值。结论食品标签上营养成分以平均值方式标示最为客观,管理规定也最为严格,应鼓励企业优先采用。建议有关部门在组织调研基础上针对食品种类和特性制定可操作性更强的判断标准。
Objective To analyze the differences between detective value and labeled value of nutrients in infant products in order to explore an available and operable way for food nutrient labeling(NL).Method 326 samples of milk powder or rice powder for infants and little children were collected from 10 provinces in China.After recorded nutrition information on food labeling,contents of protein,fat,vitamin A,calcium,iron and zinc were determined based on national standard GB/T 5413—1997.According to GB 10767—1997 and GB 13432—2004,percentages of substandard which not measured up to technique requirement or beyond maximum permission bias or range were calculated.The differences of substandard percentages in 3 ways for NL,involving labeled as average value,range or limit value,were analyzed by Chi-square test for R by C table.Results The usages of NL ways were varied due to food type,nutrients characteristics and basal contents.In the adjudged disqualified detective results,65% was beyond permission bias of labeled value,but met technique requirement recommended by national standard.The percentages of substandard in nutrients labeled as average value were higher than those of other two labeling ways,while the percentages for label as limit value were the lowest(P〈0.01).That may be caused by larger permission bias or range tacitly approved by national standard for labeling as range or limit value than average value.Conclusion It was suggested enterprises select average value for NL in priority because of its reasonableness and strict management and the departments make detailed rules for judgment standard in accordance to food class and characteristics on the basis of investigation and systematic analysis.
