摘要
介绍了各种冷却肉保鲜技术的特点,作用机理等特征。综述了其在肉类工业中的应用现状,并对其前景进行了展望。
The characteristics and mechanism of different kinds of preservation technology for chilled meat were summarized in this article. Also the application status and trends of the technology were analyzed.
