摘要
以我国资源丰富的海带作为原料,采用二乙烯苯-Caroxen-聚二甲基硅氧烷(DVB/CAR/PDMS)涂层的固相微萃取头萃取海带均浆液中的挥发性成分,并通过气质联用仪分析鉴定海带均浆液中的气味成分。结果表明,固相微萃取技术有效地吸附了海带均浆液中的挥发性成分,经NIST/Willey质谱数据库检索和文献对照,共检出29种成分,确定4种成分。所检出物质的分子量范围大部分处于128~310MW之间,并且这些成分多是一些烃类、羰基类及醇类化合物,其总百分含量高达89.86%。其中以3-羟基-1-辛烯醇的百分含量最多,为28.97%,3-羟基-1-辛烯醇,一般表现为土味、蘑菇味;其次是愈创蓝油烃、异丙基豆蔻酸酯、十六烷酸、四甲基十七烷,总含量达22.21%。这些物质共同形成了海带特殊的藻香藻腥味。
This experiment took Laminaria as the raw material and used the extracting head coated with DVB/CAR/PDMS to extract volatile substances from Laminaria homogeneous slurry and identified the substances with GC -MS equipment. The results showed SPME technology could extract volatile substances effectively, After searching NIST/Willey library and literatures, 29 substances were examined and 4 identified. Molecular weight of the examined substances were mostly between 128-310MW. Most of these substances were hydrocarbon, carbonyl compounds and alcohols, and they all together made up 89.86% of the total. 1-octen-3-ol, which generally smells like earth and mushroom, took the largest percentage of 28.97%. Then Guaiazulene, Isopropyl Myristate, Hexadecanoic acid and Heptadecane, 2,6,10,15-tetramethyl, all together took 22.21%. These substances together contributed the characteristic smell of Laminaria.
