摘要
本文对油脂中脂溶性成分的保健作用,油脂中的脂肪酸种类及构成对心血管疾病的影响以及果蔬植物油脂的防衰抗癌效果等方面的研究进展进行了比较系统的述评。提出生物膜的流动性和膜中脂溶性刚性物质和晶性物质的动态代谢强度和富积度是心血管疾病和细胞功能衰退、组织衰老的主要致因。因此,凡是改善生物膜的流动性和促进膜中脂溶性物质的扩散和代谢强度的天然食品成分,均可有效防治心血管疾病和具有防袁保健作用的假说。并建议采用量子生物化学方法研究油脂的构效关系。
The health protection of nonlipid conponents in plant oil, effects of fatty acid composition on cardiovascular disease were reviewed, and the effects of oils from vegetables and fruits seeds on antiaging and anticancer were also introduced in details.It was suggested that the mobility of biomembrane system might be the main cause for cardiovascular disease and aging. Natural components, which would increase the mobility of biomembrane and promote the degradation of cholesterols in cell membrane system, would have good effects on prevention and therapeution of hypercholesterolemia and health. It was advised to study the mechanism and structure-activity of plant oils with bioquantum chemistry.
