摘要
单甘酯是一类食品工业中常用的乳化剂 ,特别是在面制品的加工生产中 ,单甘酯既具有表面活性又可以和面粉中的主要成分发生相互作用 ,从而改善产品的加工特性和产品品质。本文概述了单甘酯的功能特性及其在常见面制品中的应用 ,并且对单甘酯的发展前景进行了展望。
L-cartinine is an important functional factor and plays a vital role in metabolism of long-chain fatty acids of mammals. The range of applications of L-cartinine in pharmaceuticals, food and feed industry are widening and demand increasing. The paper reviewed the process methods of L-cartinine synthesis and described its application in food industry briefly.
