高分辨率质谱分析技术在食品检测中的应用

摘要 高分辨率质谱(High Resolution Mass Spectrometry,HRMS)技术因其卓越的分辨率、灵敏度和精准度,在食品检测领域得到了广泛应用。本文分析了HRMS技术在食品检测领域的应用。结果表明,HRMS技术能对复杂基质中微量化合物进行精确的定性与定量分析,有效检测食品内部的农药残留、有害物质及违规添加成分。同时,HRMS技术在食品真实性鉴定和掺假行为方面表现出较高的可靠性,具备同时检测多个目标的能力,为食品安全的监管提供了坚实的科学支撑。通过结合先进的数据库与算法技术,HRMS技术在确保食品安全和促进行业标准化进程中起到了核心作用。 High resolution mass spectrometry(HRMS)technology has been widely used in the field of food detection due to its excellent resolution,sensitivity,and accuracy.This article analyzes the application of HRMS technology in the field of food testing.The results indicate that HRMS technology can accurately qualitatively and quantitatively analyze trace compounds in complex matrices,effectively detecting pesticide residues,harmful substances,and illegally added ingredients inside food.At the same time,HRMS technology has shown high reliability in food authenticity identification and adulteration behavior,with the ability to simultaneously detect multiple targets,providing solid scientific support for food safety supervision.By combining advanced database and algorithm technologies,HRMS technology plays a core role in ensuring food safety and promoting industry standardization processes.
