摘要
本文综合论述了微生物多糖-结冷胶的组成、结构、制备、性质和在食品工业中的应用现状,并对其作为微多糖类食品添加剂今后在我国的发展前景进行了分析和预测。
This paper gave a report about the composition, preparation, property and current situation of application of gellan gum as Microbial polysaccharides. The paper gave some constructive suggestions for development perspective of gellan gum as polysaccharide food additive in China.
