摘要
随着消费者对食品品质日益增长的高要求,海洋食品配料在食品工业中的重要性不断凸显。较之陆源食品配料,海洋食品配料来源广泛、种类丰富,且具有独特的功能活性,已成为食品配料开发的重要方向。系统介绍了海洋食品配料的种类及功能,包括海洋多糖类(海藻酸盐、甲壳素等)、海洋蛋白类(藻胆蛋白、胶原蛋白等)、海洋脂质类(甘油酯、磷脂等)和功能小分子类(虾青素、岩藻黄素等);同时,对海洋食品配料在食品品质改善、功能提升等方面的应用进行了介绍,涵盖肉制品、奶制品、面制品等多个加工领域;针对海洋食品配料种类少,发展滞后的问题,提出利用生物制造技术实现海洋食品配料的绿色加工,精准制造实现海洋食品配料的个性化定制,智能制造助力海洋食品配料的开发3个未来发展方向。通过对海洋食品配料的种类、功能、应用的系统分析,结合发展趋势的展望,希望为我国食品配料行业的健康和快速发展提供有益借鉴。
With the increasing pursuit of the high quality toward food,the importance of marine food ingredients in food industry was garnered great attention.Compared with terrestrial food ingredients,marine food ingredients come from a wide variety of sources with abundant diversity and unique functions,making them an important direction for food ingredient development.The categories and functions of marine food ingredients,including marine polysaccharides(alginate,chitin,etc.),marine proteins(phycobilin,collagen,etc.),marine lipids(glycerides,phopholipids,etc.)and functional small molecules(astaxanthin,fucoxanthin,etc.)were systematically summarized in this review.Additionally,the application of marine food ingredients in food quality and function improvement was introduced,covering the multiple processing fields of meat,diary and flour products.In view of the problems of limited types and lagging development of marine food ingredients,three future development trends were proposed,namely,green processing of marine food ingredients by biological manufacturing,personalized customization of marine food ingredients by precise manufacturing,and development of marine food ingredients by intelligent manufacturing.Through the systematic summary of the types,functions and applications of marine food ingredients,as well as the prospect of future development trend,it was expected to provide reference for the healthy and rapid development of food ingredients industry.
