固体颗粒稳定的Pickering乳液在食品中的应用

摘要 随着消费者对食品多样化、功能化需求的提高以及对食品质量与安全重视程度的提升,拥有稳定性好、无表面活性剂和环境友好等多种优势的Pickering乳液在食品中的应用成为研究热点。本文总结了Pickering乳液中常用的固体颗粒和影响Pickering乳液稳定性的因素以及Pickering乳液在食品中的应用,以期为Pickering乳液的开发利用提供帮助。 With the improvement of consumers’demand for diversified functionalization of food and the improvement of their emphasis on food quality and safety,the application of Pickering emulsions in food has become a research hotspot due to their advantages such as good stability,no surfactants,and environmental friendliness.This paper summarizes the commonly used solid particles in Pickering emulsions,the factors affecting the stability of Pickering emulsions and the application of Pickering emulsions in food,in order to provide help for the development and utilization of Pickering emulsions.
