摘要
多酚、精油、维生素等生物活性物质具有抗氧化、抗炎、预防慢性疾病等功效,但是它们存在溶解度低、稳定性差、生物利用度低等缺陷。研究发现植物蛋白基纳米颗粒是递送生物活性物质的良好材料。然而,使用单一的植物蛋白基纳米颗粒存在包埋率低、不稳定、易受外界环境影响等问题。植物蛋白和其他生物聚合物(包括蛋白质、多糖、多酚、表面活性剂等)结合,整合了多种生物聚合物的优点,可以克服单一蛋白质的不足,具有良好的发展前景。该文综述了植物蛋白基复合纳米颗粒的分类、制备方法及其在生物活性物质递送方面的应用现状,并对植物蛋白基复合纳米颗粒的发展前景进行了展望。
Bioactive substances such as polyphenols,essential oils,and vitamins,have antioxidant,anti-inflammatory,and preventive effects on chronic diseases,but they have defects such as low solubility,poor stability,and low bioavailability.Plant protein-based nanoparticles have been found to be good materials for delivering bioactive substances.However,the use of single plant protein-based nanoparticles has problems such as low embedding rate,instability,and susceptibility to the external environment.The combination of plant protein and other biopolymers(including proteins,polysaccharides,polyphenols,surfactants,etc.)integrates the advantages of a variety of biopolymers,which can overcome the shortcomings of a single protein and has good development prospects.In this article,the classification and preparation methods of plant protein-based composite nanoparticles and their application status in the delivery of bioactive substances were reviewed and the development prospects of plant protein-based composite nanoparticles were prospected.
