摘要
近年来,我国粤式预制菜产业随生活节奏加快和“懒人经济”等一系列因素的作用下快速发展。粤式预制菜以其方便快捷、选择性多等优点成为食品行业的新趋势。广东省是“美食之乡”,在粤菜方面取得了一定的成绩,对发展预制菜产业具有良好的产业基础,但目前粤菜应用在预制菜中仍然存在一些问题和缺陷。综述了粤式预制菜行业的发展现状,在此基础上,提出了包括粤式预制菜安全、生产加工设备、菜品风味复原度、冷链保鲜问题、粤菜复合型人才问题及解决措施来创新和发展预制菜产业。为了解决这些问题,行业需要在政策、科技、市场等方面进行创新和改进,并深入分析了该行业的发展状况中出现的优势与弊端。粤式预制菜行业的发展前景广阔,但也面临着诸多挑战,亟需通过不断的创新和努力,推动该行业的健康发展来满足消费者的需求,从而实现行业的可持续发展。
Recently,the Cantonese prepared dish industry in China has experienced rapid development due to the acceleration of modern lifestyles and various factors such as the“lazy economy”.The convenience,speed,and selectivity offered by Cantonese prepared dishes have made them a new trend in the food industry.Guangdong Province,known as the“hometown of food”,has achieved significant progress in Cantonese cuisine and possesses a solid industrial foundation for prepared dish development.However,there are still certain issues and deficiencies regarding the application of Cantonese cuisine in prepared dishes.This paper provided an overview of the current status of the cantonese prepared dish industry and subsequently addresses concerns related to safety standards,production equipment,flavor preservation techniques,cold chain logistics,as well as talent cultivation within this field.Innovative solutions were proposed to overcome these challenges and foster further advancements in this industry.To achieve sustainable development goals while meeting consumer demands effectively,it was imperative for stakeholders to continuously innovate and improve policies,technologies,markets through comprehensive analysis of both advantages and disadvantages associated with industry growth.
