摘要
魔芋葡甘聚糖(Konjac Glucomannan,KGM)是魔芋中富含的天然高分子多糖,其在食品、生物和医疗保健等诸多领域有着良好的应用与发展前景。现有研究成果表明,KGM具有多种良好的生物活性,也是一种优质的膳食纤维。为了更充分地利用KGM,目前已有多种改性KGM被制备以改变其结构与功能。本文综述了KGM及其衍生物的研究现状,为KGM相关领域的研究和基础应用提供一定参考。
Konjac glucomannan(KGM)is a natural polymer polysaccharide rich in konjac,which has good application and development prospects in many fields such as food,medicine and biology.It has been shown that KGM has a variety of biological activities is also a good dietary fiber.In order to utilize KGM more fully,a variety of modified KGMs have been prepared to change its structure and function.In this paper,the current research status of KGM and its derivatives is reviewed in order to provide a reference for the related research and application of KGM.
