摘要
[目的]探讨不同养殖环境下三角鲤的肌肉营养品质,为三角鲤的健康高效养殖及新品种选育提供参考。[方法]测定分析3个三角鲤养殖群体(广西南宁市武鸣区(WM)、广西钦州市灵山县(LS1)、广西钦州市灵山县(LS2))的肌肉一般营养成分、氨基酸、脂肪酸,并进行营养价值评估。[结果]依据氨基酸评分(AAS)标准和化学评分(CS)标准,3组鱼肉的第一限制性氨基酸均为Met+Cys;LS2组各必需氨基酸的AAS评分、CS评分和氨基酸指数EAAI均为最高,其次为LS1组,WM组最低。3组鱼肉均检测出25种脂肪酸,LS1组的ΣPUFA含量(23.34%)显著高于LS2组(19.92%),WM组的EPA+DHA含量(4.26%)显著高于LS2组。[结论]3个养殖场三角鲤肌肉营养丰富,可作为人体补充蛋白质的优质来源。LS2组肌肉氨基酸营养价值优于其他2组,LS1组肌肉必需脂肪酸营养价值优于LS2组。
[Objectives]The meat nutritional qualities of Cyprinus multitaeniata under different breeding environments were studied to provide reference for the healthy and efficient farming and breeding of Cyprinus multitaeniata.[Methods]The general nutrient composition,amino acids,and fatty acids of the meats from three populations of Cyprinus multitaeniata farmed in Wuming District(WM)of Nanning City,Lingshan County 1(LS1)and Lingshan County 2(LS2)of Qinzhou City,Guangxi Province,were measured and analyzed.The nutritional value was evaluated.[Results]According to the amino acid score(AAS)and chemical score(CS)criteria,the first limiting amino acid of fish meat in all three populations was Met+Cys.The AAS score,CS score,and index of amino acid(EAAI)of each essential amino acid in the LS2 population was the highest,followed by the LS1 population,and the WM population was the lowest.25 fatty acids were detected in fish meat from all 3 popula‐tion.The content ofΣPUFA in the LS1 population(23.34%)was significantly higher than that in the LS2 population(19.92%),and the content of EPA+DHA in the WM population(4.26%)was signifi‐cantly higher than that in the LS2 population.[Conclusions]The fish meats from the three breeding farms are rich in nutrients and can serve as a supplement of protein with high-quality for the human body.The nutritional value of amino acids in meat in the LS2 population is superior to the other two populations,while the nutritional value of essential fatty acids in meat in the LS1 population is supe‐rior to that in the LS2 population.
