摘要
研究不同浓度的外源褪黑素对“红地球”葡萄采后品质的影响,为葡萄保鲜技术提供一定的数据支撑和理论依据。以“红地球”葡萄果实为试验材料,采用5个浓度(0、50、100、200、400μmol/L)的外源褪黑素浸泡“红地球”葡萄果实0.5 h,常温贮藏,测定果实的失重率、硬度、可溶性固形物含量、可溶性糖含量、可滴定酸含量、维生素C含量、多酚氧化酶(PPO)活性、过氧化物酶(POD)活性、丙二醛(MDA)含量等指标的变化。结果表明,贮藏到第16 d时,CK组霉变严重,失重率达到35.4%,而外源褪黑素处理组均只有轻微霉点,失重率为23.8%~33.2%,且可溶性糖、MDA、PPO、POD含量均显著低于CK组;果实硬度、可溶性固形物、可滴定酸、维生素C等含量均显著高于CK组。说明外源褪黑素能有效减缓“红地球”葡萄果实采后的失水失鲜和霉变,维持葡萄果实贮藏期间的品质,保持果实良好口感,其中,以100μmol/L外源褪黑素贮藏保鲜效果最佳。
The effects of different concentrations of melatonin on postharvest quality of Red Globe grape were studied to provide the data support and theoretical basis for grape preservation technology.Red Globe grape fruits were soaked with 5 concentrations of 0μmol·L^(-1)(CK),50μmol·L^(-1)(T1),100μmol·L^(-1)(T2),200μmol·L^(-1)(T3),and 400μmol·L^(-1)(T4)of melatonin for 0.5 h,then the weight loss rate,hardness,soluble solids,soluble sugars,titratable acids,vitamin C,PPO,POD,MDA and other indexes of fruits were determined during room temperature storage.The results showed that at 16th day of storage,the CK group was seriously mildewed,and the weight loss rate reached 35.4%.Melatonin treated groups only had slight mildew spots,and the weight loss rates of different treatment groups were from 23.8%to 33.2%.The contents of soluble sugar,MDA,PPO,and POD of melatonin treatment were significantly lower than those of CK group,and the hardness,soluble solids,titratable acids and vitamin C contents of melatonin treatments were significantly higher than those of CK group.It is suggested that the exogenous melatonin treatment could maintain the fruit quality,good taste and delay the fruit dehydration,freshness loss and mildew of Red Globe fruits during storage.The best preservation effect was achieved with the concentration of melatonin at 100μmol·L^(-1).
