摘要
为延长冷鲜鸡肉的货架期,提高其食用安全性,确定以荸荠皮提取物为主要保鲜原料,结合茶多酚、壳聚糖、乳酸链球菌素(nisin)的复合保鲜技术及复合保鲜冷鲜鸡肉的最优包装形式,设计四因素三水平响应面实验,以挥发性盐基氮(TVB-N)值为响应值,采用Design-Expert软件对复合保鲜方法与TVB-N之间建立的二次回归模型进行分析。对模型进行优化验证后,确定冷鲜鸡肉的最佳复合保鲜条件为荸荠皮提取物0.40%、茶多酚0.25%、壳聚糖2.00%、nisin 0.20%,无氧气调包装的保藏性能最好。经复合保鲜结合无氧气调包装所得冷鲜鸡肉的蛋白质、脂肪、水分、灰分、氨基酸等营养指标与新鲜鸡肉相比差异不显著(P>0.05),感官接受性良好,说明荸荠皮提取物复合保鲜结合无氧气调保鲜技术可用于冷鲜鸡肉的贮藏保鲜,延长其保藏期。
In order to extend the shelf life of chilled chicken and improve its edible safety,with extract from Eleocharis tuberosa peel as the main preservation raw material,combined with tea polyphenols,chitosan,nisin,the compound preservation technology and the optimal packaging form for chilled chicken in compound preservation are determined.The four-factor and three-level response surface experiment is designed,using TVB-N value as the response index and using Design-Expert software to analyze the quadratic regression model of compound preservation methods and TVB-N.After optimizing and verifying the model,the optimal compound preservation conditions for chilled chicken are determined as follows:0.40%extract from Eleocharis tuberosa peel,0.25%tea polyphenols,2.00%chitosan and 0.20%nisin,and the preservation performance of oxygen free modified atmosphere packaging is the best.The nutritional indexes such as protein,fat,moisture,ash and amino acids of chilled chicken obtained through the compound preservation combined with oxygen free modified atmosphere packaging are not significantly different from those of fresh chicken(P>0.05),and the sensory acceptance is good,indicating that the compound preservation of extract from Eleocharis tuberosa peel combined with oxygen free modified atmosphere packaging technology can be used for the storage and preservation of chilled chicken,and extend its shelf life.
