摘要
利用文献计量学方法,结合CiteSpace和Vosviewer等软件,从多个维度对国内外芒果加工相关文献进行分析,探求芒果加工的研究现状与趋势。结果表明,芒果加工研究正处于发展上升阶段,研究视角多样,研究重心逐渐从传统芒果加工产品制作工艺探究向技术研发、芒果副产品应用以及活性化合物提取等方面转移。但国内目前非果实部分研发薄弱,技术问题是制约的主要因素。建议未来向芒果活性化合物提取以及副产品利用方面进行探索,推动芒果资源充分利用。
Using bibliometric methods combined with software such as CiteSpace and Vosviewer,the literature concerning mango processing at home and abroad was analyzed from multiple dimensions to explore the current research status and trend of mango processing.The results show that the research on mango processing is in an upward stage of development,with a variety of research perspectives,and the focus is gradually shifting from the exploration of traditional mango processing products to technology research and development,the application of mango by-products,and the extraction of active com-pounds.However,the current domestic non-fruit part of the research and development is weak,and technical problems are the main constraints.It is recommended to explore the extraction of active compounds and the use of mango by-products to pro-mote the utilization of mango resources.
