江西省地方特色预包装食品中脱氧雪腐镰刀菌烯醇污染状况调查及膳食暴露评估

Investigation and exposure assessment of deoxynivalenol contamination in local prepackaged characteristic food in Jiangxi Province

摘要 目的了解江西省地方特色预包装食品中脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON)的污染状况,估算其膳食暴露风险。方法在江西省采集102份预包装地方特色食品,包括茶饼34份、酥糖32份、桃酥36份。采用超高效液相色谱-串联四级杆质谱法测定样品中的DON含量,结合预包装食品消费量数据,通过点评估法评估江西省居民通过地方特色预包装食品中摄入DON的膳食暴露风险。结果102份样品中,DON的检出率为86.3%,含量为ND~681.0μg/kg,平均值为56.4μg/kg,低于《食品安全国家标准食品中真菌毒素限量》(GB 2761—2017)中DON的限量值1000μg/kg。不同采样环节地方特色预包装食品中DON检出率相差不大,农贸市场中所采集样品的DON均值略高于超市和网店。结论江西省地方特色预包装食品中DON污染总体水平较低,膳食暴露风险可控。 Objective This paper aims to investigate the contamination status of deoxynivalenol in local prepackaged character⁃istic food in Jiangxi Province and assesses the health risk of dietary exposure.Methods A total of 102 samples of local pre⁃packaged characteristic foods were collected in Jiangxi province,including 34 samples of tea cake,32 samples of crispy sugar and 36 samples of crisp peach cookie.The content of DON was determined by ultra-high performance liquid chromatography-tandem quadrupole mass spectrometry(UPLC-MS/MS).Coupling the consumption data of prepackaged food,point assess⁃ment method was applied to assess the dietary exposure risk of DON ingestion from local prepackaged characteristic food in Jian⁃gxi Province.Results The detection rate of DON was 86.3%in 102 samples,with contents ranging from not detected(ND)to 681.0μg/kg,the mean level was 56.4μg/kg,less than the limit value(1000μg/kg)of DON in GB 2761-2017 National Food Safety Standard Maximum Levels of Mycotoxins in Foods.There is no significant difference in the detection rate of DON in local prepackaged characteristic food at different sampling stages.The average value of DON in samples collected from farmers’markets was slightly higher than that in supermarkets and online stores.Conclusion The overall level of DON contamination in prepackaged characteristic foods with local characteristics in Jiangxi Province is low,and the dietary exposure risk is controllable.
