摘要
红外光谱技术因其快速、便捷的优势,被广泛应用于白酒酿造过程中的质量控制,评价准确,节约人力,取得了较好效果。该文概述了中、近红外光谱的检测与分析方法及其在白酒生产原料、酒曲、糟醅、基酒、成品酒以及酿酒副产物中的研究与应用,旨在为白酒质量评价与自动化应用方面提供参考。
Infrared spectroscopy has been widely used for quality control in the Baijiu brewing process due to its advantages of rapidness and convenience,accurate evaluation and saving manpower,and has achieved good results.In this paper,the detection and analysis methods of middle and near infrared spectroscopy and their research and application in raw materials,Jiuqu,fermented grains,base liquor,finished liquor and brewing by-products of Baijiu production were summarized,in order to provide reference for quality evaluation and automatic application of Baijiu.
