摘要
从酱香型白酒高温大曲、堆积糟醅中分离初筛获得4株产四甲基吡嗪菌种,通过复筛,最终选取LJ-02菌种制备功能菌剂。将微生物功能菌剂进行模拟堆积、中试试验、生产工艺研究,发现LJ-02菌种对四甲基吡嗪含量有提高明显影响。
Four tetramethylpyrazine-producing strains were isolated and screened from the high-temperature Daqu and stacking fermented grains of Jiangxiang Baijiu.After re-screening,strain LJ-02 was finally selected to prepare functional microbial agent.The functional microbial agent was applied in simulated stacking fermentation,pilot test,and production process research.The results showed that the content of tetramethylpyrazine was significantly improved.
