摘要
本试验以山楂果为原料,采用球磨粉碎、剪切粉碎、气流粉碎3种超微粉碎方法制备山楂粉,研究不同粉碎方式对山楂粉理化性质及对育肥猪生产性能的影响。结果表明:气流组超微粉碎后的山楂粉整体理化指标最佳,与球磨组和剪切组相比,容积密度极显著升高34.88%、18.37%(P <0.01),休止角显著降低了8.21%、6.62%(P <0.05),滑角显著降低了4.04%、2.62%(P <0.05);水合性能上,气流组水溶性比球磨组和剪切组显著升高了6.82%和6.89%(P <0.05),气流组比剪切组和球磨组膨胀度显著升高了0.79%和1.36%(P <0.05);气流组对育肥猪生长性能得到极显著改善;气流组总抗氧化性(T-AOC)、谷胱甘肽过氧化物酶(GSH-Px)和总超氧化物歧化酶(T-SOD)的含量与球磨组相比分别提高了2.15%、2.24%、5.96%,与剪切组相比分别提高了1.57%、3.72%、6.13%(P <0.05),丙二醛(MDA)含量分别低于与球磨组和剪切组5.42%、7.10%(P <0.05);3种超微粉碎方式相比山楂粉色度及对育肥猪血清免疫性能无显著影响(P> 0.05)。研究表明,气流粉碎山楂粉可以改善山楂粉理化性质、提升育肥猪生长性能和提高血清抗氧化性。
In this study,the hawthorn powder was prepared from Fructus crataegi by three ultra-fine comminution methods,namely ball milling comminution,shear comminution and air flow comminution,and the effects of different comminution methods on the physicochemical properties of hawthorn powder and its production were investigated.The results showed that the physical and chemical indexes of hawthorn powder after superfine grinding in air-jet group were the best.Compared with ball-milling group and shearing group,the bulk density increased by 34.88%and 18.37%(P<0.01),the angle of repose decreased by 8.21%and 6.62%(P<0.05),and the sliding angle decreased by 4.04%and 2.62%(P<0.05);On the hydration properties,the water solubility index of air flow group increased by 6.82%and 6.89%compared with the ball mill group and the shear group(P<0.05),and the swelling degree of air flow group increased by 0.79%and 1.36%compared with the shear group and the ball mill group(P<0.05),respectively;The growth performance of finishing pigs was significantly improved in airflow group;The contents of T-AOC,GSH-Px and T-SOD in the air flow group were increased by 2.15%,2.24%and 5.96%respectively as compared with those in the ball mill group,and by 1.57%,3.72%and 6.13%as compared with those in the shear group(P<0.05).The MDA content was lower than that in the ball mill group and the shear group by 5.42%and 7.10%,respectively(P<0.05).There were no significant differences in the pink color of Fructus crataegi and the serum immune performance of finishing pigs among the three superfine grinding methods(P>0.05).The results indicated that air flow comminution of hawthorn powder could improve the physicochemical properties of hawthorn powder,enhance the growth performance of finishing pigs and increase the serum antioxidant activity.
