摘要 近年来,预制食品迎来快速发展阶段,各类预制食品纷纷走向国内外市场。为探究延长预制食品保质期的有效方法,通过文献调研,分别从杀菌技术和包装技术进行综述。介绍了热杀菌技术、非热杀菌技术、真空包装、气调包装及抗菌包装等预制食品保藏方式的原理与应用,为预制食品的保藏技术研究提供一些理论指导和新思路。 The prefabricated food has ushered in a stage of rapid development in recent years.All kinds of prepared foods have entered the domestic and foreign markets.In order to explore an effective method to prolong the shelf life of prepared foods.It reviewed the sterilization technology and packaging technology by literature researching.The principles and applications of prefabricated food preservation methods such as thermal sterilization technology,non-thermal sterilization technology,vacuum packaging,modified atmosphere packaging and antibacterial packaging were introduced respectively.It provided some theoretical guidance and new ideas for the research on preservation technology of prepared food.
