摘要
花青素作为一种强大的抗氧化剂和天然着色剂,越来越多地被用作食品补充剂和营养产品的成分.广泛的应用增加了研究人员对植物花青素成分及其影响的兴趣.然而花青素颜色易受pH、光、植物激素、转录因子、温度和金属离子的影响.花青素通过羟基化、甲基化、糖基化和酰化进行修饰,为花青素的颜色和稳定性增加了多样性.因此,花青素正确的提取与纯化分析是进一步探索其营养潜力的先决条件.然而,对于花青素的提取、分离和定性定量分析技术在目前文献中的全面综述很少.该文对以往文献中描述的技术进行全面回顾和比较评估,讨论了花青素的保健作用及应用进展,旨在综述迄今为止各种生物学技术定量和定性鉴定花青素的应用进展,以及花青素对于人类健康和福利方面的各种应用,使人们对花青素相关知识有更深的了解.
As a powerful antioxidant and natural colorant,anthocyanin is increasingly used as a component of food supplements and nutritional products. More and more applications have increased researchers’ interest in plant anthocyanins and their effects on their applications. However,anthocyanin color is easily affected by pH,light,plant hormones,transcription factors,temperature and metal ions. Anthocyanins are modified by hydroxylation,methylation,glycosylation and acylation,which increases the diversity of anthocyanins’ color and stability. Therefore,the correct extraction and purification analysis is a prerequisite to further explore its nutritional potential. However,there are few comprehensive reviews on the extraction,separation and qualitative and quantitative analysis of anthocyanins in the current literature. This article comprehensively reviews and comparatively evaluates the technologies described in the previous literature,and discusses the health function and application progress of anthocyanins. The purpose of this paper is to review the application progress of various biological technologies in quantitative and qualitative identification of anthocyanins,as well as the various applications of anthocyanins in human health and welfare and the progress in this field so that people can have a deeper understanding of the relevant knowledge of anthocyanins.
